GASTRONOMY | Chipilín with bolita
A dish with a big history value and a great flavor
Tuxtla Gutiérrez is characterized by a very complete feeding, among it´s typical dishes we can find the “Chipilín with bolita”, a culinary delight of Chiapas for excellence.
The “Chipilín” are leafs with it´s own history. A maya legend tells, that “Chac” god of the rain, was in love with “Ixchel” goddess of the moon, but his love wasn’t mutual. So driven by his spite, “Chac” covered the sky with a clock of black clouds so no one could see “Ixchel”. Three years othe sky was hidden by the clouds and endless rains, all crops were lost and the rivers were overflowing, the town was slowly dying, then “Ixchel” decided to marry “Chac”, and so, the leafs, this leafs covered all the fields, but this leafs were edible, and so, the town was saved from the brink of death. Our ancestors called it “Chepil-ix”, which means “moon leaf”.
The making of the “Chipilín with bolita” contains: “Chipilín” leafs (that are easily obtains in local markets), cob grains, lard of vegetable oil, tortilla mass, cream cheese, cream and salt.
The chipilín, besides being delicious, has manny healthy characteristics: it contains a high quality of iron, calcium, beta carotene and fiber.
